You could give her a gift certificate for an Italian restaurant near where she lives.

Or how about a gift basket of writing supplies (cards, pens, stationery, etc) and you could attach a card or note saying that you hope she keeps in touch with you (if you'd like her to).

I always recommend the pimsleur method (though it's expensive, it's relatively easy to find on p2p and bt networks) because it's fast and easy at the same time. I find it to be an excellent program for beginning a language - you can get about the same level of fluency that a couple semesters of college study would give you in about a month and a half with pimsleur (though after that point you may want to switch over to more traditional methods). Try looking for Pimsleur Italian I, II, and III.

For pronunciation, songs can be awesome. Just sing along to the lyrics and your pronunciation will get much better.

You can find great music videos (current) at:

There are a lot of beautiful (and affordable) figurines in gift stores such a Hallmark. Some are symbolic of a teacher and student and some say thank you on them. I would give one of these keepsake type things that she can always remember you by.

In a roundabout way, have a conversation about chocolates and you'll find out if she's allergic to anything.
You could get her a nice bottle of Italian wine or liqueur (in a gift basket with chocolates and Italians cookies)...or you can make a basket of coffee items with biscotti, chocolates, etc).

Sometimes some a pretty gift basket of soaps, lotions, and things like these (pampering/spa) makes a great gift. Italians like these things too.

But most of all, just give from your heart. She would appreciate anything if given genuinely.

Wow, this is great! I am in the same boat: I studied Italian when I was in school AND discovered that I could learn a lot of the language via pop songs, especially the ones from the 60's and 70's.
Here are two links which I rely on for all the latest and greatest: (scroll down to the bottom of the homepage where there are "anni 60, anni 70, anni 80" etc. links and complete versions of pop songs from all eras)
and
Buona fortuna e buon ascolto! (Good luck and good listening)
